Island Rice!

Here's a really cool rice recipe that is reflective of the Caribbean in taste and color vibrancy. I call it the "Island Rice."  Its really easy to make and very tasty!! Here's the recipe:


1 can of pigeon peas (or 1 cup of fresh pigeon peas)
1 1/2 cups of brown rice
1 pack of Sazon seasoning 
1 large red bell pepper
3 stalks of finely chopped scallions
2 teaspoons of salt (add salt to taste)
Boullion seasoning
3 tablespoons of vegetable oil


  • 1.   Boil rice in water with 1 teaspoon of salt until cooked. Drain excess water using a collander.              
  • 2.  In a large frying pan pour vegetable oil.  Heat oil until simmering then add rice and boullion seasoning. Stir for 1 minute.     
  • 3.  Then add 1 tsp of salt (or salt to your taste), scallion, pigeon peas and red bell pepper.  Continue to stir for 2 minutes.
  • 4.  Add 1 pack of sazon seasoning and stir for another 2 minutes.
  • 5.  Turn off stove and serve.

Hope you enjoy! If you like green bell peppers feel free to include it. You can have alot of fun with this recipe.  Add ingredients to make it as fun as you want.  This rice dish should be both savory and festive!
