Easy, Healthy and Delicious Corn Salsa

On Cinco de Mayo (Spanish for "5th of May") I thought what better snack to have than corn salsa.  I used simple pantry ingredients to achieve a delectable blend of flavors that would leave anyone wanting more.  Whilst I used simple pantry ingredients such as a can of corn and 2 cans of diced tomatoes and chili peppers for convenience nothing beats the use of fresh corn, freshly diced tomatoes and chilli peppers.


Ingredients:

1 can of corn
2 cans of diced tomatoes and chili peppers
1/3 cup freshly chopped cilantro
1/4 cup chopped chives
1/2 finely cubed onion
1 lime squeezed (or 2 tablespoons lime concentrate)
1 teaspoon salt (or salt to taste)


1.  Open cans of corn and diced tomatoes and chili peppers and pour into a medium size bowl.  Microwave for 2 minutes. Remove from microwave and let sit to cool.

2.  Add chopped cilantro, finely cubed onions, chopped chives, lime juice, salt and mix together.

3. Eat with tortilla chips right away or let sit in refrigerator to season before eating for an even better taste.


This was so easy, delicious and healthy.
