Quick and Easy ~ Sweet and Sour Chicken ~

This was so good! It was perfect for a Sunday afternoon. The pineapple flavor adds the perfect sweet and sour flavoring to the entire meal. This recipe was adapted from a recipe on foodnetwork.com


Ingredients:

2 tablespoons vegetable oil
2 boneless chicken breasts sliced into strips
Salt and pepper (to taste)
1/2 cup chopped red pepper
4 teaspoons cornstarch mixed with 4 teaspoons water
1 cup canned pineapple chunks drained with 1/2 cup reserved juice
3 tablespoons light brown sugar 
3 tablespoons rice wine vinegar 
1/4 cup chicken stock 
1/2 cup chopped green pepper

Directions:

1.  In a small bowl season chicken strips (salt & pepper).

2.  Heat a large non-stick skillet for 30 secs. 

3.  Add oil and heat over medium high heat. 

4.  Add seasoned chicken strips.

5.  Brown chicken and remove from heat. 

6.  To the hot oil add red and green peppers and stir fry for about 1 minute.

5.  Add the pineapple chunks, pineapple juice, brown sugar, red wine vinegar and chicken stock.

6.  Let ingredients simmer in skillet for about 4 minutes until sauce begins to reduce. 

7.  Add cornstarch and water mixture and let ingredients continue to simmer and thicken.

8.  Stir in chicken strips and allow to cook for 5 minutes making sure all chicken strips are fully coated with the thick sauce.

Serve with white rice. Enjoy MN!
