Coconut Pancakes!

I won't be making my pancakes plain anymore because this recipe is soooo good! There is nothing like the delicious taste of sweet coconut in your mouth in the morning. 
What a way to start my day! 


Recipe adapted from

  • 1¼ cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup shredded, sweetened coconut
  • 1 egg, beaten
  • ½ cup buttermilk
  • ¾ cup coconut milk
  • 1 tablespoon salted melted butter
  • butter/cooking spray/vegetable oil for frying

1.  In a medium bowl mix all dry ingredients together.

2.  Mix in beaten egg, buttermilk and coconut milk. Mix until ingredients have blended well but do not over mix.
3.  Heat frying pan/skillet and drop measure amount of batter. Let cook until bubbles begin to pop in center of pancake, about 2 minutes.

4.  Flip pancake and cook for an additional minute or so until golden brown. 

Pour syrup over pancakes and garnish with shredded sweet coconut for added deliciousness~
