Strawberry Chiffon Pie

This is a really quick Chiffon pie recipe I came across on PreparedPantry.com.
To add even more variety and flavor to this recipe you can include a few strawberry chunks into the mix.


Ingredients


16 ounces fresh or frozen strawberries, pureed
1/2 cup sweetened condensed milk
2 envelopes unflavored gelatin
2-3 drops red food coloring (color as desired)
2 cups whipping cream
1/4 cup sugar
1 3/4 cup graham cracker crumbs
1/2 cup butter (1 stick), melted

1/4 cup sugar

Directions

1. Preheat the oven to 350 degrees.

2. Mix graham cracker crumbs and sugar in a bowl. 

3. Add in the melted butter and mix well. Pour into a 9 inch pie dish.

4. Using your hands and the flat bottom of a cup shape crumbs into pie dish.

5. Bake crust for 6-8 minutes.

6. Using a mixer, beat the whipping cream until it forms soft peaks. 

7. Add the sugar and continue to beat until stiff peaks form. Set aside. 

8. Put pureed fruit in a saucepan over medium heat and add gelatin. Stir until gelatin is fully dissolved.

9. Add in condensed milk and food coloring (any amount for the intensity of color desired).

10. Fold the fruit mixture into the whipped cream until smooth.

11. Pour filling into the crumb crust. Refrigerate to let it set for 45 minutes.
For quicker results place in freezer for 15-20 minutes
