Butternut Squash and Sausage Frittata

Today I felt like having Frittata so I decided to make one and it was wonderful! For my recipe, I chose to use Butternut Squash and Sausage as my main ingredients. All the ingredients I used were so rich and flavorful that I did not feel the need to add any cheese.  This Frittata is a great idea for Breakfast, Lunch or Dinner. You can also make it the night before and refrigerate before serving it up the next morning. I assure that everyone will be happy! All smiles 🙂  Hope you enjoy this tasty recipe.

Ingredients

1/2 cup celery (chopped)
1/4 cup ham
1/4 cup squash (1/2 inch cubes)
7 large eggs
3/4 cup evaporated milk
1 cup sliced sausage
2 tablespoons chopped chives
2 garlic cloves minced
3 tablespoons mayonnaise
1 tablespoon olive oil
1/4 teaspoon cumin
1/2 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon  adobe seasoning
1/4 cup parmesan (optional)

Servings: 9-12

Directions:

1.  Heat the olive oil in a skillet on the stove for about 1 minute and then add celery,cubed butternut squash, and garlic and sautee for 5 minutes.

2.  After 5 minutes add the sausage and ham and stir fry for about 3 more minutes. Turn off stove and set aside.

3.  In a large bowl beat together 7 eggs. Then add milk, mayonnaise, cumin, chives, onion powder, salt, adobe seasoning, Parmesan and beat well.

4.  Add egg mixture to the skillet and mix ingredients. Turn on stove and let cook on medium heat for 3 minutes using a fork to move egg from the walls of skillet pulling them fork towards the center.

5.  Remove from heat and place in an oven at 350 degrees C. Let bake for 15 minutes or until you see the sides of the frittata pull away from the skillet.

6.  Serve warm.
