The Best Peach Pie

Its the middle of summer and its just one of those days that I just had to have the perfect sweet treat after dinner. Seeing that I live in Georgia and peaches are abundant this time of year a peach pie was the ideal dessert.  I made this recipe using deliciously ripe peaches from my local market. To save time I used ready-made pie crust from the freezer section of my grocery.  If you would like to make your own pie crust I have included a great recipe for the best buttery flaky crust you have ever had. 5 ripe peaches (peeled and sliced)
Ready made pie crust (any brand-at room temperature)
1/2 cup sugar
1 tablespoon cinnamon
2 tablespoons all purpose flour
1/2 teaspoon salt
1 teaspoon grated ginger
1/4 teaspoon pure vanilla essence
1/2 lime (juiced)


1.   Prepare a greased 9 inch baking pie dish and preheat oven to 375 degrees C.
2.   In a large bowl mix together all ingredients.
3.   Line the bottom of the pie dish with the first piece of pie crust dough making sure crust properly covers all of the bottom of the dish. Cut off extra dough.
4.  Pour peach mixture into dish.
5.  Cover with second piece of crust and seal the ends using fingers.
6.  Remove any extra dough from the top.
7.  Using a small knife cut 4 to 5 slits around the top of the dough.
8.  Bake at 375 degrees for about 30 minutes or  until top of pie is golden brown.
9.  Serve with ice cream and by itself. Delicious!
