Summer Cucumber Salad

Well its officially the summer time! Cucumber is a very abundant vegetable during this time of year. I was able to harvest quite a bit from my backyard garden. I really love this vegetable. It always refreshes me when it eat it. Let’s just say I am a huge fan. I grew up eating vegetables like this all the time.

Cucumber is one of the common vegetables found in Caribbean. It is generally readily available year round at local markets due to the beautiful tropical climate.  It is also used as a complementary salad to a variety of Caribbean dishes ranging from cod fish ceviche with bread to a simple rice and beans with stewed chicken. I am making full use of my cucumbers this year. Enjoy this refreshingly simple and quick summer cucumber salad!

Ingredients

3 Medium Cucumbers
2 Stalks Green Onion (finely chopped)
1/4  Teaspoon Black Pepper
1 1/2  Tablespoon  Olive oil
1 Teaspoon of salt (or to taste)
1 Tablespoon Vinegar
1/4 Cup Green Bell Pepper (finely Chopped)
1/4 Chopped Onions

Directions:

1.  Carefully wash skin of cucumbers with water.  Peel skin off (option – you can peel in a pattern as I did or you can leave skin on).

2. Slice cucumbers in very thin slices and place in a large bowl.

3. To bowl add green onions, black pepper, oil, vinegar, salt, bell pepper and chopped onion.

4.  Mix all ingredients together and transfer to bowl for serving. Refrigerate for a cold cucumber salad.
