Deliciously Crispy Potato Latkes

2 Medium Potatoes
1 Egg
2 Tablespoons Green Onions
1/2 Teaspoon Salt (or to taste)
1/2 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder
3 Tablespoons of Oil for frying

1.  Peel potatoes and shred in a food processor (or a grater).
2.  To the same bowl with shredded potatoes add one egg.
3.  Mix egg in thoroughly using hands or spoon.
4.  To the mixture add green onions, salt, onion powder and garlic powder.
5.  Using hands take small amounts and drop into hot nonstick frying pan.
6.  Fry until  golden brown.  Serve plain or with sour cream (or your choice of dip).

Tips:  I used a non-stick frying pan rather than a skillet because it allows for a more even frying without over heating and burning the latkes.
Add eggs immediately to potatoes right after shredding to prevent or lessen oxidation of potatoes.
