Chick Pea Salad

Chick Peas also known as Garbanzo Beans are very popular in the Caribbean. It is used in famous recipes like Curried Chana (another name for Chick Peas), filling for Doubles and Fried Chana just to name a few. Widely used not only in the Caribbean but across the Globe it has become a great substitute for some of the more calorie packed foods like pasta. Chick peas are healthy because they are high in protein but also are a great source of dietary fiber . You cannot go wrong with Chick Peas.

Chick Peas can be found in two forms in your local supermarket. You may find it in uncooked raw form. Preparing Chick Peas in this form requires first soaking in water before cooking.  You may also find it in canned formed which I used for this recipe. Either way you choose your chick pea recipe would be equally delicious.

You will be amazed as to how simple and quick this recipe is to prepare. For a heavier salad you can add some cherry tomatoes and mayonnaise for a creamier consistency. You can play with this basic recipe. Make it your own. Put what you love into it. I hope you enjoy it and get addicted to having this salad as much as I did. Ingredients

2 Cans of Chick Peas
1 Red Onion (Diced)
3 Stalks Green Onion (Chopped)
2 Stalks Celery (Diced)
1 Tablespoon Oyster Sauce
1 Tablespoon Apple Cider
1/2 Teaspoon Black Pepper
1 Teaspoon Salt
3 Tablespoons Olive Oil
1/2 Teaspoon Paprika

1. Open the two cans of chickpeas and empty the fluid from cans.
2. Place peas in a colander and rinse once with water.
3. Pour peas into a large bowl.
4. Add red onion, chopped green onions, diced celery.
5. In a small bowl mix together oyster sauce, apple cider, black pepper, salt, olive oil and paprika to create a dressing.
6. Add dressing to large bowl with Chick peas. Mix well. 
7. Serve as a side with rice or as a snack with crackers or toasted french bread.
