Spicy Caribbean Fruit Salad

It's the day after Memorial Day so I thought after eating all that Barbecue it was time to relish a healthy medley of delicious fruits. I love fruits but I wanted to spice it up a little, island style. I created this quick and easy Spicy Caribbean Fruit Salad with three main fruit ingredients: Mango, Pineapple and Watermelon. This combination was not only appealing to the eyes but also affords a well rounded taste with a delightful balance of spicy and sweet flavors.  It's simply refreshing. A pleasant treat for the palate.  I will say no more. Here we go!


1 Large Mango (Diced)
1 Cup of Cubed Pineapple
1 Cup Cubed Watermelon
1/4 Cup Chopped Green Onions
2 Jalapeno Peppers Diced (Optional 1 scotch bonnet pepper)
1 1/2 Teaspoon Sriracha Hot Sauce (Add more for a spicier salad)
3 Tablespoons Pineapple Juice
1 Teaspoon of Sugar
1/4 Teaspoon Curry Powder
Pinch of Salt


1.  To a large bowl add diced Mango, Pineapple and Watermelon.

2. In a small bowl mix together Pineapple juice, Sriracha, salt, sugar and curry powder.

3. Add chopped Jalapeno and green onions to fruit bowl and lightly mix.

4.  Add spicy sauce to fruit bowl and mix together.
