Caribbean Yellow Rice

Caribbean Yellow Rice is a very popular Caribbean side dish. Not only can it be prepared for special dinners during Easter and Christmas but it can also be eaten from  day to day.

My mother always prepares yellow rice for Christmas dinner. In her recipe she loves to add finely cubed carrots and sweet pepper into the mix. Some people add raisins, whereas others choose to enjoy plain yellow rice for what it is, a sort of antithesis to white rice which reflects the vibrant Island culture.

Yellow Rice adds fun and delectable taste to ones plate. It does not matter how or when you choose to cook this dish, it can be considered one of the stand alone gems for Caribbean side dishes. It is also a wonderful base for any recipe that requires the addition of meat or vegetables. This is my version of  my mom’s recipe. I hope you enjoy it!

Ingredients

2 Cups of Rice
1 1/2 Packs of Sazon
1 Tablespoon Coconut Milk/Creme
1/3 Cup of Red Bell Pepper
3 Tablespoons Chopped Green Onions
1 Tablespoon Oil for frying
1 Tablespoon Butter
1/2 Teaspoon Garlic Powder

Directions:

1.  Boil two cups of  rice and allow to cool in Colander for approximately 20 minutes.
2.  To a hot skillet add oil.
3.  Add rice to hot skillet and stir.  Immediately add sazon and coconut milk and continue to stir.
4.  To skillet add, chopped red bell pepper, green onion and butter. Stir to mix ingredients well.
5.  Add garlic powder and stir for about 2 minutes.
