Coconut Shrimp Sauté

Shrimp is by far one of my favorite sea foods. Its nonpareil ease of preparation and availability make it a choice selection for many dishes.  For this recipe I chose to prepare a simple Coconut Shrimp Sauté which is not only healthy but also big on flavor.  In this recipe I used precooked deveined jumbo shrimp.  Precooked shrimp is best when having to prepare a quick meal in very little time. Not only is it time efficient, but it also readily absorbs seasonings.


My mouth is just watering sharing this recipe with you. I really hope you enjoy this dish as much as I did. Here we go!

Coconut Shrimp Sauté

Ingredients

Two Cups Precooked Jumbo Shrimp (Thawed)
1/4 Cup Red Bell Pepper
1/4 Cup Cilantro
1 Tablespoon Butter
1 Tablespoon Oil
1/2 Onion
1/4 Teaspoon Garlic Powder
1/2 Teaspoon Salt
4 Tablespoons Coconut milk
1/2 of a Lime

Directions

1.  To large skillet add oil and butter and heat.
2.  Stir fry chopped onions, pepper, and cilantro for about three minutes.
3.  Add shrimp and stir fry for 3 more minutes.
4.  Add tablespoons of coconut milk and garlic powder, juice from half a lime and salt to taste.
5.  Saute for an additional 2 minutes.

Serve by itself or with sides like pasta or rice
